We make frozen samosa patti and spring roll sheets in our own kitchen in South Gujarat, rolled and frozen the same morning.
Two brothers started Marutee Foods in 2016, making frozen pastry sheets for the halwais and caterers around Valsad. The range has stayed deliberately narrow since.
The dough is mixed and rested in the morning, rolled and cut by hand-guided sheeting, layered so it peels apart clean, and frozen before the day is out. Nothing is bought in and re-labelled.
Every sheet is layered so it lifts apart straight from the freezer, without thawing the whole block.

Every batch runs through the same four stages on the day it is mixed.
Wheat flour, water and salt, mixed to the same hydration each time and rested until the dough relaxes.
Rolled down to a set thickness and cut to size, with thickness sampled through the run.
Layered so the sheets peel apart clean, then blast frozen the same day and held at −18°C.
